If you follow along with my kitchen adventures over on Instagram, you already know about my ongoing series, “Can It Krispie?” It is my personal quest to see if I can take my absolute favorite desserts, drinks, and flavor pairings and turn them into gooey, crispy marshmallow masterpieces.
Today, we are tackling a flavor that is practically running through my veins: morning coffee. I love my morning espresso, so taking that bold, roasted coffee flavor and folding it straight into melted marshmallows felt like the most logical move. The rich bitterness of the espresso cuts through the sweet marshmallow fluff, and once you drizzle everything with melted dark chocolate, chopped white chocolate chunks, and a sprinkle of flaky sea salt, you get a fancy coffeehouse vibe in a nostalgic no-bake bar.

Why You Will Love These Coffee Rice Krispie Treats

How to Make Espresso Rice Krispie Treats
Start by lining your favorite 8×8 pan with parchment paper so your finished treats lift out cleanly later without sticking. In one of your large mixing bowls, add your crispy rice cereal along with an extra handful of whole mini marshmallows if you want those signature gooey pockets throughout your bars.
Place a large saucepan over medium-low heat and melt your butter until it is completely liquid. Next, add the mini marshmallows to the pan and stir continuously over low heat until they are melted into a smooth mixture, and then add in the espresso powder and stir until dissolved. Take the saucepan off the heat and stir in the vanilla bean paste.
Pour the warm espresso marshmallow mixture over the crispy rice cereal in your bowl. Use a greased silicone spatula to quickly fold everything together until all the cereal is evenly coated. Transfer the sticky mixture into your prepared pan and gently press it into an even layer with light pressure so the treats stay soft and chewy.
To finish, add your chocolate chips and coconut oil to a small microwave-safe bowl and heat in short 20-second bursts until glossy and melted. Drizzle the dark chocolate over the top of the treats, scatter your chopped white chocolate across the surface, and top with a generous pinch of flaky sea salt. Let the treats set at room temperature for a couple of hours before slicing into 16 even squares.

Tips and Best Practices for the Best Krispie Treats
- Dissolve the espresso powder in marshmallow mixture: Whisking the espresso powder into the warm, melted butter and marshmallow mixture ensures it dissolves fully.
- Do not pack the pan too tightly: When pressing the cereal into the pan, use a light hand. Compacting the mixture too firmly will turn your treats hard and dense instead of soft and chewy.
- Use fresh marshmallows: Stale marshmallows melt down into a stiff, tough syrup. Fresh, soft marshmallows guarantee the fluffiest texture.
- Add whole mini marshmallows to the cereal: Tossing an extra handful of unmelted mini marshmallows in with the dry cereal before pouring the warm syrup creates delicious, melty pockets in every slice.
People Also Ask (FAQs)
Can I use instant coffee instead of espresso powder? Yes, you can substitute instant coffee granules, but espresso powder has a deeper, more concentrated flavor that pairs best with the sweet marshmallow base. If using standard instant coffee, make sure it is finely ground so it dissolves completely in the warm butter.
Do these contain caffeine? Yes, because they are made with real instant espresso powder, these treats contain a mild amount of caffeine. If you want an evening treat or a kid-friendly version, swap in a decaf instant espresso powder.
How do I store homemade Rice Krispie treats? Store your cut espresso treats in an airtight container at room temperature for up to 4 days. Keep them out of the refrigerator, as cold air hardens the marshmallows and dries out the cereal.
Can I make these treats dairy-free or vegan? Easily! Just swap standard butter for plant-based vegan butter, use vegan mini marshmallows, and choose dairy-free dark and white chocolate chips for the topping.
