Ingredients
  

  • 4 tablespoons unsalted butter 1/2 stick
  • 10 ounces mini marshmallows plus an extra handful for mix-ins
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla bean paste
  • 5 cups crispy rice cereal
  • 1/2 cup semisweet chocolate chips
  • 1/4 teaspoon coconut oil
  • 2 tablespoons white chocolate chopped
  • Flaked sea salt for finishing

Instructions
 

  • Line an 8x8 pan with parchment paper and set it aside.
  • In one of your large mixing bowls, add the crispy rice cereal and toss in an extra handful of whole mini marshmallows.
  • Melt the butter in a large saucepan over medium-low heat until it is completely liquid. Add the 10 ounces of mini marshmallows to the saucepan and stir continuously over low heat until they are completely melted, smooth, and fluffy. Remove the pan from the heat, add the espresso powder and vanilla bean paste, and mix thoroughly until the espresso powder is fully dissolved and combined into the smooth marshmallow mixture.
  • Pour the warm espresso marshmallow mixture over the crispy rice cereal in your bowl.
  • Working quickly before the marshmallow sets, use a greased spatula to toss and fold everything together until all cereal pieces are thoroughly coated. Transfer the mixture into your prepared pan and press down lightly with a spatula or parchment paper into an even layer without packing it down too firmly.
  • Add the chocolate chips and coconut oil to a small microwave-safe bowl and heat in 20-second increments, stirring in between, until completely melted and smooth. Drizzle the melted chocolate generously over the top of the treats in the pan.
  • Scatter the chopped white chocolate pieces over the wet chocolate drizzle and finish with a light sprinkle of flaked sea salt.
  • Let the treats cool and set at room temperature for at least 1 to 2 hours before using the parchment paper to lift them out, slicing into 16 even squares, and serving.
