bbq chicken pinwheels

BBQ chicken pizza has always been one of my favorite flavors. I love the combination of sweet and spicy BBQ sauce with tangy red onions and creamy ranch, especially when there’s a bunch of cheese involved too. I already have a recipe for barbecue chicken pizza, and a recipe for Healthy Pizza Pinwheels, so I thought, why not put the two together? That’s how these barbecue chicken pizza pinwheels were born and they are GOOD.

Imagine a delicious chewy pizza dough, filled with sweet and smoky bbq chicken, melted cheese, tangy onions, all dressed up with some creamy ranch dressing. It’s a combination that I can’t get enough of, and I hope you love it as much as I do! It’s also a higher protein, lower calorie option when you want a pizza fix, so go ahead and have seconds (and then thirds).

Making bbq chicken pizza pinwheels

This recipe is best made in a square baking dish (8×8 or 9×9), as it will yield 12 pinwheels. Other than that, you’ll just need a mixing bowl, cutting board, and some utensils. To make these, you’ll first mix up the ingredients for the pizza dough and roll it out into a rectangle on a well-floured surface. If you’re using a rolling pin, make sure to flour that well too – it’s a sticky dough!

To make these, you’ll need:

Dough:

  • 2 cups flour
  • 1 cup nonfat greek yogurt (I use Fage 0%)
  • 2 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 egg

For the filling you’ll need:

  • 1/2 cup bbq sauce
  • 1.5 cups cheese
  • 1/4 c chopped red onion
  • 2 cups chopped chicken breast

First, mix all of your dough ingredients, ideally using a stand mixer + dough hook (or use a wooden spoon, but the dough is sticky). Flour a surface well (I use a silicone baking mat) and roll the rough out into a rectangle (roughly 12×16 inches. In another small bowl, mix chicken and bbq sauce, then spread over the dough, leaving about an inch uncovered on the long edge thats further from you. Cover with cheese and chopped red onion.

Starting at the long edge that is closest to you, carefully begin to roll the dough up and away from you toward the uncovered edge. Roll it all the way up, leaving the seam side down to create a seal. Cut into 12 pinwheels and arrange in a well-sprayed baking dish. Pro tip – cut with some dental floss so you don’t want to smush your swirls! Just cut a long piece of floss, shimmy it under the roll, then bring the ends together and pull them across each other to easily cut. Spray tops with cooking spray and bake at 375 for 25-30 minutes. Remove from the oven, finish with a drizzle of ranch, more chopped red and green onion, and enjoy!
