Peanut Butter Pretzel Rice Krispie Treats

Welcome to the latest edition of “Can It Krispie?” over on my Instagram, where I take my favorite desserts, snack foods, and flavor combos to see if they can survive being transformed into marshmallow treats.

Today’s experiment takes inspiration from one of my all-time staple pantry snacks: chocolate peanut butter pretzels. I have a massive soft spot for anything that leans heavily into the sweet and salty lane, so combining them into a cereal bar seemed like a no-brainer. These bars hit every note: you get the nutty richness of creamy peanut butter melted right into the marshmallow fluff, the salty crunch of chopped pretzels cut through crispy rice, and a note of rich chocolate throughout, finished with extra pretzels and flaky sea salt. It delivers that signature chewy, gooey krispie bite with maximum crunch.

How to Make Chocolate Peanut Butter Pretzel Rice Krispie Treats

Start by prepping your 8×8 pan with a sheet of parchment paper so the bars lift out easily later. In a large mixing bowl, toss together the crispy rice cereal, chocolate chips, and chopped pretzels (plus a handful of unmelted mini marshmallows if you want those gooey bakery pockets).

Set a large saucepan over medium-low heat and melt your butter. Once melted, stir in the peanut butter until completely smooth and combined. Dump in the marshmallows and stir continuously over low heat until they collapse into a velvety, peanut-buttery cloud. Pull the pot off the burner, stir in the vanilla bean paste, and mix thoroughly.

Pour the warm peanut butter marshmallow base directly over your cereal and pretzel blend. Use a greased spatula to quickly fold everything together until every bite is evenly coated. Turn the mixture out into your prepared 8×8 pan and lightly press it into an even layer without compacting it too firmly.

Arrange your 16 whole pretzels evenly across the surface (one for each slice), and finish with a generous pinch of flaky sea salt. Allow the pan to cool and set at room temperature before slicing into 16 squares.

Tips and Best Practices

  • Press with a light touch: Avoid crushing the cereal and pretzel mixture into the 8×8 pan too hard. Over-packing squashes the air pockets and leaves you with rock-hard bars instead of soft, chewy ones.
  • Keep heat low and slow: Melt the marshmallows on medium-low heat. Blasting them with high heat scorches the sugar, making the final treats brittle and stiff.
  • Grease your tools: Marshmallow and peanut butter are notoriously sticky. A light spritz of nonstick cooking spray on your spatula makes folding and spreading effortless.

People Also Ask (FAQs)

Can I make these treats gluten-free?

Yes! Use a certified gluten-free crispy rice cereal and swap out standard pretzels for your favorite gluten-free pretzel twists. The remaining ingredients are naturally gluten-free.

How should I store these leftovers?

Store your sliced squares in an airtight container at room temperature for up to 4 to 5 days. Avoid placing them in the refrigerator, as the cold air will harden the marshmallows and turn the pretzels stale.

Equipment

  • 8×8 Pan
  • Saucepan
  • Stovetop
  • Mixing Bowl

Ingredients

  • 4 tbsp unsalted butter 1/2 stick
  • 1/3 cup creamy peanut butter
  • 10 oz mini marshmallows plus extra for mixing in, if desired
  • 1 tsp vanilla bean paste
  • 4 cups crispy rice cereal
  • 1.5 cups pretzels roughly chopped
  • 1/2 cup chocolate chips
  • 16 whole pretzels for topping
  • Flaky sea salt for finishing

Instructions

  • Line an 8×8 pan with parchment paper and set it aside.
  • In a large mixing bowl, combine the crispy rice cereal, chopped pretzels, chocolate chips, and an extra handful of unmelted mini marshmallows if desired.
  • Melt the butter in a large saucepan over medium-low heat until completely liquid. Add the peanut butter to the saucepan and stir until fully melted and combined with the butter. Add the 10 ounces of mini marshmallows and stir continuously over medium-low heat until completely melted, smooth, and fluffy. Remove the saucepan from the heat, add the vanilla bean paste, and mix thoroughly.
  • Pour the warm peanut butter marshmallow mixture over the cereal, chocolate, and pretzels. Working quickly before the mixture sets, use a greased spatula to fold everything together until evenly coated.
  • Transfer the mixture into your prepared 8×8 pan and press down lightly with a spatula into an even layer without packing it down too firmly.
  • Place the 16 whole pretzels on top of the chocolate drizzle so each sliced treat gets one pretzel. Sprinkle flaky sea salt across the top to finish.
  • Let the treats cool and set at room temperature for at least 1 to 2 hours before slicing into 16 squares and serving.
