Key Lime Pie Pops

If you are looking for the absolute ultimate warm weather treat that tastes like a fancy bakery dessert but requires zero actual baking, welcome to your new obsession. Key lime pie is easily one of my all-time favorite flavors because it has that perfect balance of sharp, tart citrus and sweet, velvety creaminess. After turning this flavor profile into a scoopable ice cream, I knew I had to take it a step further and transform it into portable, handheld ice cream bars.

The base of these pops uses my favorite genius kitchen hack: combining light Greek yogurt and fluffy Cool Whip. This mashup creates a light, airy texture with a super rich and decadent mouthfeel while keeping things high in protein and lower in fat. To give it that authentic pie experience, I folded in plenty of crushed graham crackers to capture the buttery crust, and then encased the whole thing in a crisp, sweet white chocolate shell. They are refreshing, perfectly portioned, and taste like they came straight from a gourmet ice cream shop.

How to Make Key Lime Pie Ice Cream Pops

Getting that viral, crackly candy shell finish down the sides of your pops is incredibly simple when you use the proper gear. You can pick up the exact popsicle bags I use on Amazon here. They prevent any major kitchen messes and make storing them in your freezer a total breeze.

To assemble, you will drop your white chocolate chips straight into the bottom of each pop sleeve. Melt the chocolate by standing the bags up inside a mug filled with boiling water, then use a chopstick or a dull butter knife to smoothly spread that melted chocolate all along the interior walls. While that hardens up, stir your key lime pie Greek yogurt and reduced fat Cool Whip together in a bowl until smooth and fluffy. Fold in your crunchy graham cracker crumbs, scrape the mixture into a piping bag, and fill your chocolate-lined sleeves. Smooth them out flat, zip them shut, and freeze.

Tips and Best Practices for the Perfect Frozen Pops

Use a warm knife for coating: When you are spreading the melted white chocolate up the sides of your pop bags, working with a slightly warm chopstick or knife can help keep the chocolate moving smoothly before it sets against the plastic.

Squeeze the air out: Before zipping the tops of your freezer pop bags shut, gently press down on the filled portion to squeeze out any trapped air pockets. This prevents large ice crystals from forming inside your ice cream layer.

Don’t over-crush the graham crackers: When prepping your graham crumbs, leave a few small, distinct chunks instead of grinding them down into a fine sand. Those tiny, crunchy pockets provide the best textural contrast against the creamy filling.

People Also Ask (FAQs)

Can I use regular plain or vanilla Greek yogurt instead? You can use vanilla Greek yogurt if you are in a pinch, but using the key lime pie flavored Greek yogurt is what gives this recipe its signature, authentic pie flavor without needing to buy fresh key limes or zest.

How do I get the frozen pops out of the bags easily? When you are ready to eat, simply run the outside of the plastic bag under warm tap water for just two or three seconds. This instantly releases the white chocolate shell from the plastic so the bar slides right out.

Can I make these ahead of time for a party? Absolutely. These popsicle sleeves seal up airtight, meaning you can keep them stored flat in your freezer for several weeks without worrying about freezer burn. They are a fantastic grab-and-go dessert option.
