These healthy key lime pie ice cream pops feature a creamy lime yogurt and Cool Whip filling mixed with graham cracker crumbs inside a crunchy white chocolate shell.
Add one and a half tablespoons of white chocolate chips into the bottom of each freezer pop bag. Carefully place the bottom of the bags into a mug filled with boiling hot water for about one to two minutes until the white chocolate is completely melted.
Use the back of a dull knife or a chopstick to gently spread the melted white chocolate up the sides of the bag until the interior is evenly coated.
In a medium mixing bowl, combine the light key lime pie Greek yogurts and the reduced fat Cool Whip, stirring until smooth. Gently fold the crushed graham cracker pieces into the yogurt mixture until evenly distributed.
Transfer the key lime pie mixture into a piping bag or a large plastic bag with the corner snipped off for clean assembly.
Carefully pipe the filling into each white chocolate coated bag, squeezing the filling down to fill up the bag.
Seal the zip tops of the bags securely and place them flat in the freezer.
Freeze the pops for three to four hours or until completely solid, then slide them out of the bags and enjoy.
