protein cookie dough dates

If you’ve ever wanted a snack that feels like dessert but still sneaks in a little protein, these Protein Cookie Dough Stuffed Dates are about to be your new go-to. They’ve got that soft, caramel-like sweetness from the dates, a creamy peanut butter cookie dough center, and a drizzle of chocolate on top that pulls everything together. It’s rich, it’s satisfying, and honestly… it tastes way more indulgent than it actually is.

What I love most about these is how simple they are to throw together. No baking, no complicated steps, just mix, stuff, drizzle, and chill. It’s one of those recipes that feels a little fancy but takes barely any effort. Perfect for meal prep, an afternoon pick-me-up, or when you want something sweet that won’t completely derail your day.

And let’s talk about that texture for a second. You get the soft chewiness of the date, the thick cookie dough center, and that slight snap from the chocolate once it sets. Add a little sprinkle of sea salt on top and it hits every craving at once. Sweet, salty, creamy, and just a little bit chocolatey. It’s giving “I’ll just have one”… and then immediately going back for another.

Making Protein Cookie Dough Stuffed Dates

This recipe is super straightforward, but getting that perfect cookie dough texture is key. Start by mixing together your peanut butter, protein powder, vanilla bean paste, and sweetener if you’re using it. You’re looking for a thick, scoopable consistency that holds its shape but is still easy to work with. If it feels too thick, you can loosen it slightly with a tiny drizzle of honey or maple syrup.

Next, prep your dates by slicing them open lengthwise and removing the pits. Try not to cut all the way through. You want them to open like a little pocket so they can hold all that filling.

Scoop a small amount of the cookie dough mixture and press it into each date. Don’t worry about making them perfect. A slightly overfilled, rustic look honestly makes them even better.

For the chocolate, melt your chocolate chips with a little coconut oil in the microwave in short intervals, stirring in between until smooth and glossy. This helps thin the chocolate just enough for an easy drizzle.

Drizzle the melted chocolate over the stuffed dates, then finish with a sprinkle of flaky sea salt. That final touch really brings out all the flavors.

Pop them in the fridge and let them set for at least an hour. This step helps the chocolate harden and gives the filling a firmer, more cookie dough-like texture.

Tips & Best Practices

If your peanut butter is on the thicker side, give it a good stir before mixing. Natural peanut butter works great here, but it should be smooth and easy to combine.

Taste your mixture before stuffing the dates, especially if you’re using unsweetened protein powder. You can always add a little extra honey or maple syrup to balance things out.

Use soft, fresh dates if possible. If your dates feel a little dry, you can warm them slightly or soak them in warm water for a few minutes to soften them up.

Don’t skip the chill time. It might be tempting to eat them right away, but they’re so much better once the chocolate sets and everything firms up.

Store these in an airtight container in the fridge. They hold up really well and make the perfect grab-and-go snack throughout the week.
