Instructions
In a medium bowl, mix together the peanut butter, vanilla protein powder, vanilla bean paste, and honey or maple syrup if using, until a thick, smooth, cookie dough-like texture forms that is easy to scoop.
Slice each date lengthwise and remove the pit, being careful not to cut all the way through so the date can hold the filling.
Scoop a small amount of the cookie dough mixture and press it into the center of each date, filling them generously.
Place the chocolate chips and coconut oil in a microwave-safe bowl and heat in 30-second increments, stirring between each, until fully melted and smooth.
Drizzle the melted chocolate over the stuffed dates using a spoon. Sprinkle a small pinch of sea salt over each date while the chocolate is still warm.
Transfer the dates to the refrigerator and let them chill for at least one hour, or until the chocolate has fully set and the filling has firmed up.
