Ingredients
  

  • 14 dates 12-15 depending on their size
  • 1/2 cup peanut butter
  • 30 g vanilla protein powder one scoop or 4-6 tbsp
  • 2-3 tbsp honey or maple syrup optional, if using unsweetened protein powder
  • 1 tsp vanilla bean paste
  • 1/2 cup chocolate chips
  • 1/4 tsp coconut oil
  • Sea salt

Instructions
 

  • In a medium bowl, mix together the peanut butter, vanilla protein powder, vanilla bean paste, and honey or maple syrup if using, until a thick, smooth, cookie dough-like texture forms that is easy to scoop.
  • Slice each date lengthwise and remove the pit, being careful not to cut all the way through so the date can hold the filling.
  • Scoop a small amount of the cookie dough mixture and press it into the center of each date, filling them generously.
  • Place the chocolate chips and coconut oil in a microwave-safe bowl and heat in 30-second increments, stirring between each, until fully melted and smooth.
  • Drizzle the melted chocolate over the stuffed dates using a spoon. Sprinkle a small pinch of sea salt over each date while the chocolate is still warm.
  • Transfer the dates to the refrigerator and let them chill for at least one hour, or until the chocolate has fully set and the filling has firmed up.
