We eat salmon at least once a week, every week. Whether it’s my Greek Salmon Bowls or Bang Bang Salmon Bites, I’m always looking for new ways to use salmon. This Air Fryer Salmon with Mango Salsa has earned a permanent spot in the dinner rotation because it’s SO GOOD y’all. The salmon has a tangy, sweet glaze (think similar to a Japanese BBQ sauce), topped with a delicious mango salsa that’s sweet, tangy, and a little hot. I pair it with some veggies (typically broccoli) and some rice for a meal that’s filling, balanced, and oh-so-satisfying. I hope you love it too!
Making Air fryer salmon with mango salsa
Despite looking fancy, this meal is super simple to make. First, you’ll make the glaze for your salmon, which is comprised of:
- low sodium soy sauce or coconut aminos (I use the Trader Joe’s coconut aminos which are on the sweeter side so I omit sweetener)
- powdered sugar substitute (I like this one from Swerve)
- cornstarch
- water
- garlic powder, onion powder, chipotle chili powder
Combine all ingredients in a dish and mix well. Then, either microwave for 30 sec at a time, stirring until thickened (about 2 min total), or put in a small saucepan over medium heat and stir until thick (like maple syrup consistency). Once the sauce is thickened, you’ll brush it over your salmon, then spray well with cooking spray. Place on a well-sprayed or lined air fryer tray and air fry at 390F for 12-14 min, until salmon has an internal temp of 145F (I check with a meat thermometer).
Note: If you don’t want to make your own glaze, then Bachan’s sauce makes a great substitute – just brush it on the salmon.
While the salmon cooks, make your salsa. It’s comprised of:
- fresh mango, peeled and diced
- red pepper, peeled and diced
- fresh jalapeno, seeds and stems removed, diced
- red onion, diced
- zest and juice from a fresh lime
- fresh cilantro, chopped
- Fresh garlic, minced
- Salt and pepper, to taste
Combine all of the above and mix. Taste and season according to your preference. Spoon salsa over your cooked salmon and serve over rice and veggies. Store leftovers separately in an airtight container in the fridge. Enjoy!

Ingredients
- 2 filets salmon
- 2 tbsp coconut aminos or low sodium soy sauce
- 1 tbsp powdered sugar substitute skip if using sweetened coconut aminos like the ones from Trader Joe’s
- 1/4 tsp cornstarch
- 2 tbsp water
- 1/2 tsp onion powder
- 1/4 tsp chipotle chili powder
- 1/4 tsp garlic powder
- 1 small mango diced (about 3/4 cup total)
- 1/3 cup red bell pepper diced (about ½ a bell pepper)
- 1/2 jalapeno steam and seeds removed, diced (about 2 tbsp)
- ¼ cup red onion diced
- 1 garlic clove minced (about 1 teaspoon minced garlic)
- 1.5 tbsp chopped cilantro
- Juice of ½ a lime about 1 tablespoon
- Zest of half a lime
- Salt and pepper to taste
- 2 cups rice
- 2 cups broccoli
Instructions
- Combine salmon glaze ingredients in a microwave safe bowl and mix until fully incorporated. Microwave for 1 minute, stir, and then microwave in 15 second intervals until syrup-like (about another 30-45 sec total). You can also add sauce to a saucepan and simmer for 5-6 min, until thickened.
- Brush glaze over salmon and spray well with cooking spray.
- Air fry salmon at 390 F for 12-14 minutes, until it reaches an internal temperature for 145F.
- While the salmon cooks, prepare your salsa by mixing mango, jalapeño and bell pepper, onion, and cilantro together. Add lime zest, juice, and garlic and stir. Taste and season with salt and pepper as desired.
- Once the salmon is done, serve over steamed rice with a side of broccoli or vegetable of choice. Top each salmon filet with half of the mango salsa. Enjoy!
