Spicy Sweet Potato & Cottage Cheese Power Bowl

Ingredients
- 1 lb ground chicken
- 2 tbsp taco seasoning
- 2 cups sweet potatoes cubed
- 4 cups Brussels sprouts trimmed and halved
- 2 cups cottage cheese
- 2 ripe avocados chopped
- 1 cup pickled jalapeños
- 4 tbsp hot honey
- Olive oil spray
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F.
- Cube sweet potatoes and trim Brussels sprouts. Spray lightly with olive oil and season with salt and pepper.
- Air fry sweet potatoes and Brussels sprouts for 15-20 minutes, shaking the basket halfway through, until soft and browned.
- While vegetables are cooking, brown ground chicken in a skillet over medium heat. Once cooked through, add taco seasoning and 2-3 tbsp water. Stir to combine and cook for another 2 minutes.
- To assemble each bowl: add ½ cup roasted sweet potatoes, 1 cup roasted Brussels sprouts, and about 1 cup of the seasoned chicken.
- Top with ½ cup cottage cheese, ½ chopped avocado, and ¼ cup pickled jalapeños.
- Drizzle 1 tbsp hot honey over the entire bowl and enjoy while warm!
