Making this healthy peanut butter apple cobbler is surprisingly easy, which makes it perfect for a weeknight dessert or even meal prep for the week. The combination of warm, spiced apples with that nutty peanut butter crumble is seriously next-level comfort food.
First, you’ll start by cooking your apples in a large saucepan with monk fruit sweetener. I love using monk fruit because it gives you that sweetness without the sugar crash, and it’s totally paleo-friendly. Once the apples have released their liquid and gotten nice and tender (about 5-10 minutes), you’ll add cornstarch to thicken everything up. This creates that perfect gooey apple filling that makes cobblers so irresistible. Let it thicken for another 5-8 minutes, then set it aside while you work on the topping.
The peanut butter crumble topping is where the magic happens. You’ll combine natural peanut butter with maple syrup, almond flour, coconut flour, and baking powder until you have a solid dough ball. I personally use natural peanut butter because it has minimal additives and lets that pure peanut flavor shine through. You could also swap it for almond butter if you prefer! The combination of almond flour and coconut flour keeps this gluten-free while still giving you that perfect crumbly texture.


Once you’ve got your dough ball, you’ll lightly grease a 9×9 baking pan and pour in your apple filling. Then comes the fun part – crumbling that dough ball over the top to create an even topping layer. Pop it in the oven at 350°F for about 15 minutes, and your kitchen will smell absolutely amazing. Let it cool slightly before cutting into it, and definitely serve it with a scoop of vanilla ice cream or whipped cream (use dairy-free versions to keep it vegan!). - 7 cups peeled and chopped apples about 6 large apples
- 1/2 cup monk fruit sweetener
- 3.5 tbsp cornstarch
- Pinch salt
- 1 tsp apple pie spice
- 1/2 cup natural peanut butter
- 2.5 tbsp maple syrup
- 6 tbsp almond flour
- 1.5 tbsp coconut flour
- 1 tsp baking powder
Instructions
- Add apples to large saucepan with monk fruit sweetener and simmer for approximately 5-10 minutes. Once the apples have released liquid, add cornstarch and stir, letting it thicken for about 5-8 minutes. Remove from heat and set aside.
