Ingredients
  

Apple Filling
  • 7 cups peeled and chopped apples about 6 large apples
  • 1/2 cup monk fruit sweetener
  • 3.5 tbsp cornstarch
  • Pinch salt
  • 1 tsp apple pie spice
Peanut Butter Crumble Topping
  • 1/2 cup natural peanut butter
  • 2.5 tbsp maple syrup
  • 6 tbsp almond flour
  • 1.5 tbsp coconut flour
  • 1 tsp baking powder

Instructions
 

  • Add apples to large saucepan with monk fruit sweetener and simmer for approximately 5-10 minutes. Once the apples have released liquid, add cornstarch and stir, letting it thicken for about 5-8 minutes. Remove from heat and set aside.
  • Preheat oven to 350°F.
  • Combine crumble topping ingredients in a bowl until you have a solid dough ball.
  • Lightly grease a 9×9 baking pan and pour in apple filling. Crumble the dough ball over top, creating an even topping layer.
  • Bake for 15 minutes. Remove from oven and let cool slightly. Cut and serve with ice cream or whipped cream (use dairy-free to keep it vegan). Enjoy!
