I love love love pancakes. They’re one of my ultimate comfort foods, and whenever I make them, I always double the batch so I can refrigerate or freeze some for later. I have a lot of pancake options on my site if you’re looking for inspo! However, the downside of pancakes is they can take forever to cook. Standing there flipping them can easily turn into your whole morning – and who has time for that?! That’s what I created this oven-baked option, which has the flavor and texture you’d expect from a pancake, but no flipping required. This Gluten Free Banana Pancake Bake is a perfect breakfast meal-prep option that’s still comforting and delicious, but far easier to make. Pair it with some protein for a balanced, delicious morning meal!

Making a Gluten Free Banana Pancake Bake

Making this breakfast really couldn’t be any easier. First things first, preheat your oven to 350F. If you have a blender (a big or or a little smoother blender works, just do it in batches), this is truly a breeze. Add in your oats, eggs, yogurt, milk, sweetener, vanilla, cinnamon, and baking powder in a blender and blend until smooth.

Spray a baking dish (I used a 9×9) well with cooking spray and pour in your batter. Top with chocolate chips and any desired toppings. You can also add nuts, dried fruit, slices bananas, sprinkles etc – go wild! Bake for 30-34 minutes, until the edges are golden brown and a toothpick inserted comes out clean.

Let cool slightly, cut into 9 slices, and then serve with extra toppings and maple syrup. Enjoy!

Ingredients
  

  • 2 ripe bananas
  • 1 cup oats
  • 4 eggs
  • 2/3 cup greek yogurt 5.3 oz container
  • 1/4 c milk
  • 1/4 cup monk fruit sweetener
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 c chocolate chips I mix up chopped for the top and some inside

Instructions
 

  • Preheat oven to 350F.
  • Combine oats, eggs, yogurt, milk, sweetener, vanilla, cinnamon, and baking powder in a blender and blend until smooth.
  • Spray a 9×9 baking dish well with cooking spray, and pour batter in. Top with chocolate chips.
  • Bake at 350 for 30-35 minutes, until solid and edges are golden brown.
  • Let cool, slice, and enjoy!
