I’ve been on an absolute bagel KICK lately. I made these Pepperoni Pizza Bombs, filled some with spinach artichoke dip, and my latest iteration may just be my favorite yet. These Air Fryer Jalapeno Popper Bites are SO GOOD. Like cheesy, salty, a little spicy, yet enveloped in a perfectly soft and fluffy exterior. They’re so easy to make, so they’re perfect as an appetizer for a crowd or to make ahead for snacks for the week. They’re WW friendly, higher in protein, and downright TASTY.
Making Air Fryer Jalapeno Popper Bites
These are an almost weekly occurrence in my house because they’re so quick and easy to whip up. Just mix up the dough, split it, fill it, roll it, and air fry it. In under 20 minutes, you’ve got a melty, cheesy, spicy snack that will absolutely have you going back for seconds (no judgment here).
- Nonfat Greek Yogurt
- All purpose flour mixed with baking powder, salt
- Half a jalapeño, diced finely with seeds removed (or you can use canned jalapenos for a milder flavor)
- 4 tablespoons of light cream cheese
- 1/2 cup non fat mozzarella cheese
- Salt pepper garlic & onion powder to season
- Cooking spray
Mix chopped jalapeno, cream cheese, mozzarella cheese, and seasoning in a small bowl.
Combine all purpose flour, baking powder, salt in a bowl. Mix together and then add nonfat Greek yogurt. Mix until a dough forms and then flour the outside of the dough well so it’s easy to handle.
Cut into 12 pieces and roll each piece into a ball. Create an indent in the center and flatten each piece until you have a disc that’s about 1.5 inches in diameter. Fill each ball with about 1 tsp of the filling (if you have extra, you can go back and add a bit more). Pinch the edges together to close up the ball. Roll it back into a ball shape and place on an air fryer tray. Spray well with cooking spray, top with a bit more seasoning and air fry at 350F for ~9 minutes, until golden brown. Let cool slightly, then enjoy!
Store leftovers in the fridge for up to 4 days, and reheat in the microwave or air fryer (350F for 4 min).
