Healthy Banana Crepes

As far as breakfast foods (or desserts) go, Crepes feel like a maximum-fancy-level-dish. With Valentine’s Day around the corner, they immediately came to mind. However, traditional crepes, while amazing, are typically made with lots of butter or oil and are super sweet. So I decided to lighten them up, instead sweetening them naturally with ripe banana, which also makes for an amazing texture. These Healthy Banana Crepes are simple to make, and you can fill them with fruit, chocolate, nut butter, etc for a perfect special breakfast or fancy dessert!

Making Healthy Banana Crepes

These are an absolute breeze to make because the batter itself is made in the blender. Simply add your ingredients and blend on high speed until you have a totally smooth batter. The batter consists of:

  • eggs
  • milk of choice (I used almond milk)
  • a super ripe banana (like fully brown, super ripe – that will make these sweet!)
  • vanilla extract for flavor
  • a little bit of sugar or sugar replacement (I use Swerve to keep these WW friendly)
  • all purpose flour
  • salt

Throw it all in a blender on high speed until smooth. Let sit in the fridge for 15-30 minutes. Then, take your non-stick pan and heat to medium heat. Spray well with cooking spray. Add 3-4 tbsp of batter to the pan and swirl batter around until the bottom is covered (for reference, I used a small pan – 8 inches). Once the batter has cooked enough that it’s not runny and the sides start to lift (about a minute or two), gently flip over. Your crepes should only be slightly browned, but not dark! Let cook for another 30-45 seconds.

These take a little practice, but after the first few you’ll be a pro. Fill crepes with fruit, nut butter, chocolate, etc and enjoy! I like to fill mine with slices bananas and Gooey Spread (which is like a healthier nutella). Store unfilled crepes in an airtight container in the fridge for up to 3 days, but these are best enjoyed fresh.

    These are by far the best crepes ever. The flavor is so good with the banana in them you can eat them plain! I’ve tried so many crepe recipes and this is definitely the one I’m sticking with

    these turned out really great! I used wholemeal flour and I didn’t want to clean the blender so I just used a mashed banana I had frozen (it wasn’t super ripe but it was a pretty soft banana) and used a whisk to mix it all together (plus that’s more fun) it definitely wasn’t super smooth but I didn’t mind. I also couldn’t be bothered to chill the batter. but they still turned out amazing! will be making these again 🙂

    I’ve just tried making it for Sunday breakfast and it is great! Although the way to even the batter is a bit tricky, after a couple of attempts the crepe is even and nice, I just served with some fruit spread and almond butter and it tasted great, thank you so much for the recipe!
