Vegan, gluten-free, and dang delicious. These s’more banana bars have it all, and they NEED to be added to your baking rotation. I love to whip up a batch of these and enjoy them as a super filling breakfast with coffee, or as a snack throughout the day! They’re delightfully sweet and make an excellent dessert option as well. With a peanut-buttery oat base that’s nice and chewy from the bananas and a decadent chocolate and marshmallow toppings, what’s not to love?!
Making S’mores Banana Bars
These are a perfect recipe to reach for when you have bananas that have gone brown because you forgot about them (woops!), but you’re tired of just making banana bread. First, mash your bananas well with a fork (or use a potato masher). Stir in peanut butter, oats, oat flour, and chocolate chips.
Pour into a parchment-paper lined (or very well greased) 8×8 pan and bake at 350F for 15 minutes, until the edges are slightly golden brown. Then, top with marshmallows and chocolate chips, and bake for an additional 5 minutes to let the marshmallows brown and let the bars finish cooking through. You can also put your marshmallow and chocolate on prior to baking – just depends on your oven and preference of how toasted you like your marshmallows. Then, just let them cool, slice them up into squares, and enjoy! They’re vegan, gluten-free, egg-free and dang tasty.

Ingredients
- 3 mashed ripe bananas
- 1 cup oats
- 1/2 c + 3 tbsp oat flour
- 1/2 c peanut butter
- 1/4 c chocolate chips in the bars
- Chocolate chips and marshmallows for topping
Instructions
- Preheat oven to 350F
- Mash bananas thoroughly with a fork
- Stir in peanut butter, oats, oat flour, and chocolate chips
- Pour into a parchment-lined 8×8 pan and top with marshmallows and chocolate chips.
- Bake for 15-20 min, until edges are slightly golden brown.
- Let cool completely before cutting!
