February means Super Bowl time, baby. And whether you care about football or not, we can all agree that Super Bowl snacks are work celebrating. From wings to dips to chips to sweets, it’s an epic spread. Unfortunately, a lot of typical game day foods aren’t great for you, especially if you’re trying to stick to WW. That’s why I am SO excited to share this Healthy Buffalo Chicken Dip. One serving is 1 WW point, it’s creamy, spicy, and so satisfying, and is sure to please anyone. It’s perfect for the Super Bowl, but also perfect for literally any other day ever (because buffalo chicken is a year round staple in my house).

Making Healthy Buffalo Chicken Dip

The only thing better than a tasty recipe is an easy one. After work, school, life – a lot of us don’t have the time or energy to cook. We just want to throw something together and forget about it, but still have it taste good. Tired people, rejoice. This recipe is literally as easy as combine, stir, and wait. It comes together in roughly 3 hours in the slow cooker, and requires next to no ‘active cooking.’

First, I filet my chicken breasts so they’re a bit thinner and cook faster. If you want to use the full breasts that’s fine, but then you’ll want to add cook time (roughly 4-5 hours on low, then add cheese and yogurt, and another hour on low). Then, top the breasts with the hot sauce, water, ranch seasoning, and cream cheese, and mix it all together. Set on high for 2 hours and let it rock and roll while you go about your day. After 2 hours, remove your chicken and shred it with 2 forks (or try this method). Add the shredded chicken back in, and mix in Greek yogurt and shredded cheese. Let it rock on low for another hour and that’s it. You can just set it to warm until you’re ready to eat!

Serving the dip

This dip is good on literally anything. To serve it, I made quick tortilla chips in the air fryer. Just take your favorite tortilla (Mission Carb Smart or Maria and Ricardos are both great for WW) and cut it into 8ths. Spray both sides of the tortilla, season with salt and pepper, and air fry at 370 for 7-8 minutes, until nice and crispy. I also added some cut celery to the plate because it’s a perfect vehicle for this dip. You could also serve it with cut cucumbers, baby carrots, your favorite chips, etc.

If you’re looking to have this dip be more of a main event, prepare a sweet potato, cut it open, and stuff with buffalo chicken dip. Top with some green onion and blue cheese crumbles, and you’ve got a killer meal that’s still WW friendly.

Ingredients
  

  • 1 lb Boneless, skinless chicken breast Filleted in half
  • 1/2 cup Frank's Hot Sauce
  • 1 1/2 tbsp Ranch Seasoning
  • 1 tbsp Water
  • 1 tbsp Light cream cheese
  • 1/2 cup Nonfat Greek Yogurt
  • 1/2 cup Light mozzarella cheese shredded

Instructions
 

  • Filet chicken breasts in half so they're thin and cook faster.
  • Add chicken to slow cooker, cover with hot sauce, water, ranch seasoning, and cream cheese. Stir to combine.
  • Cook on high for 2 hours.
  • Remove chicken breasts from slow cooker, shred with forks, and add shredded chicken back into the slow cooker.
  • Add Greek yogurt and cheese to mixture and stir together.
  • Cook on low for 1 hour.
  • Set to warm to keep your dip warm, or serve immediately!

    This is the best kept secret ever….truly tastes like an indulgent full-fat Buffalo chicken dip. I made double the recipe for Super Bowl Sunday and I’m so glad I did because I plan to eat this with everything possible this week..it’s THAT good. AND 1 WW POINT PER SERVING?!?

    This recipe was SO GOOD! I love a good Buffalo chicken dip and this recipe was full of flavor! My boyfriend has the taste buds of a child and refuses to eat anything relatively healthy and he just ate it and raved about it!!! Can’t wait to try more recipes!
