Italian hoagies are some of my favorite, loaded with meats, cheese, banana peppers, and veggies, all in a red wine vinaigrette. I managed to take all of those flavors and turn it into a lower carb version with this Italian hoagie chopped salad that I think you’re going to love!

Ingredients
- 8 cups iceberg Lettuce shredded (roughly one head)
- 5 slices thin provolone chopped
- 4 oz Turkey pepperoni chopped (about 1/2 cup)
- 6 oz Ham chopped, about 1 cup
- 2/3 cup Banana peppers chopped
- 2 cups cherry tomatoes chopped
- 1/2 small red onion diced
- 3 tbsp Olive oil
- 1/3 cup Red wine vinegar
- 1 Tsp Italian seasoning
- 1/2 Tsp powdered confectioners sugar replacement
- Salt pepper to taste
Instructions
- Chop all salad ingredients and add to a mixing bowl. Toss together.
- Combine all dressing ingredients in a small mixing bowl and whisk together to combine.
- Pour dressing over salad and toss to coat. Enjoy! Store leftovers separately in airtight containers in the fridge.
