Chicken Parmesan is one of my ultimate comfort foods. The combination of meat and cheese and tomato sauce never fails to satisfy. However, the process of making it can often be a long one, since you need to prepare and fry the chicken, then, topic, bacon again, etc. Sometimes, you just don’t wanna spend an hour (or more) making dinner. Well then, allow me to introduce these Chicken Parmesan meatballs, which have all the flavors of your favorite dish, and a quicker, lighter, easier package.
Making chicken Parmesan meatballs
What’s great about these is that you just need to mix up the meatballs, bake them right in the sauce, then top with cheese, and enjoy. It streamlines process because you can prep everything together.
Preheat your oven to 400F. To make the meatballs, combine ground chicken with herbs and spices, egg, Parmesan cheese, and some breadcrumbs to bind it all together. Mix well, scoop into meatballs, and set aside.
Then, take a jar of your favorite pasta sauce (I look for low or no sugar options) and dump it into a baking dish (I used an 8×8, or you can use a 9×9 or a large skillet). Space meatballs out evenly right in the sauce and bake for 30-35 min (I use a meat thermometer to make sure they’re done). Remove from the oven, make sure the meatballs are all saucy (you can flip them over or just spoon a bit of sauce), and top with cheeses. I do the mozzarella first, then add some Parmesan on top. Put back in the oven and bake another 6-8 min, until the cheese is melted (you can also just broil for a few min but keep an eye on it so you don’t burn your cheese).
Garnish with a little fresh parsley and serve with your choice of side! I put these over some protein pasta for a filling, delicious meal. Enjoy!
