The Reuben is one of my all time favorite sandwiches. I love the combo of corned beef (or turkey pastrami) with cheese, sauerkraut, and creamy dressing. It’s one of the foods I’m pretty much always craving, which led me to the thought of ‘how can I enjoy a lightened up version?’ These Reuben Egg Rolls are it, y’all. A healthier version of a Reuben turned into a crispy egg roll.
The egg roll itself has a crispy exterior, filled with meat, cheese, and sauerkraut mixed together. The real star of the show here may just be the healthier Thousand Island dressing that acts as a dipping sauce for the egg rolls. Perfectly creamy and tangy, you’re going to want to put it on everything! These egg rolls are quick and easy to throw together, making them a great option to make ahead and reheat throughout the week for a tasty lunch or snack. I hope you enjoy them as much as we do in my home!
Making Reuben Egg Rolls
Whereas a traditional Reuben requires precise stacking, these egg rolls are super simple. Just mix up the filling, roll up the egg rolls, air fry and enjoy! To make them, you’ll need:
- Egg roll wrappers
- Cooking spray (I use avocado oil spray)
- Sliced pastrami, turkey pastrami, corned beef, or roast beef as your meat filling
- Sauerkraut, which you’ll want to drain really well. I recommend squeezing it through a cheese cloth.
- Fat free mozzarella cheese (or if you’re not following WW, you can just use shredded Swiss)
Chop your meat finely. In a mixing bowl, combine meat, cheese, and sauerkraut until you have a uniform mixture. Lay egg roll wrappers down so that it is a diamond shape (point facing you). Spoon filling into the center, then dip your finger in clean water and wet all of the edges of the egg roll wrapper. Fold bottom of the egg roll upwards, then fold in the sides, then, holding in the filling, roll the egg roll to seal. Place on sprayed air fryer tray/basket, seam side down. Repeat for all egg rolls. Spray well with cooking spray and air fry at 375F for 7-9 minutes, until crispy golden brown. Enjoy!
Healthy Thousand Island Dressing
You can totally serve these Reuben Egg Rolls on their own, but the combo with Thousand Island Dressing is really magical. The creamy, sweet, tangy flavor of the dressing plays super well with the salty, savory egg rolls. My version is lighter (and more WW friendly) than. a typical Thousand Island Dressing, but tastes awesome!
To make it, you’ll need:
- Light mayo
- Ketchup (I like the no added sugar one from Heinz)
- Dill pickle relish
- Spicy Brown mustard
Combine all ingredients in a small bowl and mix together until uniform. Store in the fridge until ready to use.
