Sushi and bagels with lox are two of my favorite foods. So imagine my excitement when I found a way to put them together in the same recipe! These Keto Smoked Salmon Rollups are one of my favorite apps/snacks lately, because they combine the perfect little bites of sushi with the flavors of a lox bagel. These rollups are quick and easy to make, they’re keto, WW friendly, gluten free, and vegetarian, so they’re perfect for gatherings as well!
Making Keto Smoked Salmon Rollups
These are perfect for a snack or appetizer that you can whip up in just a few minutes. These only take 5 ingredients:
- Smoked salmon
- Cucumber, sliced thin
- Avocado, sliced
- Cream cheese (I use reduced fat to keep these WW friendly too)
- Everything Bagel Seasoning
You’ll want to lay out a large piece of cellophane on a flat service and lay out your smoked salmon, overlapping slightly, to make a rectangular shape. Then, on the long edge closest to you, layer cucumber, then add cream cheese, then avocado. For the cream cheese, you can use a piping bag or a sandwich bag with the end cut to easily pipe a line of it across the roll. See below:
Then, using the cellophane as your guide, tightly roll the entire thing up so you have one long roll. Let chill in the fridge for an hour so it can firm up before slicing.
Then, you’ll remove your roll from the cellophane, cut it into bite sized pieces, and finish them off with a dash of everything bagel seasoning. Enjoy immediately! Leftovers can be stored in the fridge for up to 2 days.
