Now that the new year is in full swing, I know a lot of us are trying to meal prep, eat better, etc while maintaining our sanity. I’m going to level with you – it’s tough. Coming up with new meals that are tasty, healthy, and don’t take forever can be a struggle. But that’s what I’m here for! I’m committed to creating recipes that are all of the above – and these Firecracker Turkey Bowls are my latest creation that I think you’re going to love.
Sweet, spicy, and packed with flavor, the firecracker sauce on the turkey is what makes this dish. It’s also the only real measuring involved – otherwise you can just cook up your ground turkey, coat it in the sauce, and serve with some rice and broccoli for a super easy meal. Protein packed, WW friendly, and so tasty, this recipe is perfect for weeknights, meal prep, and helping you reach your new year goals. Hope you enjoy!

Making Firecracker Turkey Bowls
Making these is a breeze, because you really only need to make the sauce. First, prep your veggies and rice as the base of your bowl. Then, heat a pan over medium heat and add ground turkey and season with salt, pepper, and a bit of garlic powder. Break it up into small crumbles and cook until thoroughly cooked through (no pink remains). As it’s finishing, make your sauce. To make it, you’ll need:
- 1/3 cup unsweetened ketchup
- 2 tbsp coconut aminos
- 2 tbsp rice vinegar
- 1 Tsp ginger (fresh, grated)
- Salt pepper & garlic powder to taste
- 1 tbsp sriracha (less if you don’t like spice)
- 2 tbsp brown sugar replacement (I like this one)
- 1 Tsp sesame oil
- 1/2 Tsp cornstarch + water to thicken it

That’s it! Combine all of the ingredients minus the cornstarch mixture in a small saucepan and mix together over medium heat to let the flavors marry (about 3-5 minutes). Then mix the corn starch and water into a slurry, add it in, and stir until the sauce thickens a bit. Pour the sauce on the turkey and toss to fully coat. Serve over rice with a side of veggies and enjoy!

Firecracker Turkey Bowls

- Saucepan

Ingredients
- 1 lb lean ground turkey
- 2 cups broccoli steamed
- 2 cups rice cooked
- 1/3 cup unsweetened ketchup
- 2 tbsp coconut aminos
- 2 tbsp rice vinegar seasoned
- 1 Tsp ginger fresh grated
- 2 tbsp brown sugar replacement or sub honey, sugar, etc
- salt to taste
- pepper to taste
- garlic powder to taste
- 1 tbsp sriracha less if you don’t like spice
- 1 Tsp sesame oil
- 1/2 Tsp corn starch + 1/2 tsp water
Instructions
- Prepare rice and broccoli and set aside.
- In a frying pan over medium heat, add a bit of oil or cooking spray and add ground turkey. Season with salt, pepper, garlic powder, and break up into crumbles. Cook thoroughly until no pink remains.
- In a small saucepan, combine all sauce ingredients (minus cornstarch mixture) over medium heat and mix to combine. Let simmer for 3-5 minutes, then add corn starch slurry and mix in well to thicken the sauce. Remove from heat, pour sauce over ground turkey and toss to coat.
- Build each bowl by adding 1/2 cup rice, 1/2 cup broccoli, and topping with 1/4 of the turkey mixture. Enjoy!

Made this for dinner. So good. I didn’t have ground turkey so I used ground chicken. Now I have either lunch or dinner for the next couple of days 😊
