I’ve always been obsessed with the chocolate-pistachio combination– the rich, nutty flavor of pistachios paired with smooth chocolate creates this incredible depth that transforms simple rice cakes into something that feels indulgent. This Dubai Rice Cake Muddy Buddies recipe is ridiculously easy to make, requires just five ingredients, and satisfies those sweet cravings without the heaviness of regular puppy chow. It’s become my go-to afternoon pick-me-up or late-night treat when I want something sweet but don’t want to feel weighed down after!

Making Dubai Rice Cake Muddy Buddies

What I love most about this recipe is how quickly it comes together. You’ll need just 15 minutes of active prep time, then some patience while it chills in the fridge.

First, you’ll crush your plain rice cakes in a ziplock bag. The key here is not to pulverize them completely – you want chunks about an inch big so there’s still that satisfying crunch when you bite into them. Then you’ll melt your chocolate with pistachio cream (I’ve found it at Walmart and Wegmans, but any pistachio cream works great). The microwave makes this super easy – just remember to go in 30-second increments and stir frequently to avoid burning the chocolate.

Once your chocolate-pistachio mixture is smooth, pour it over your crushed rice cakes in a mixing bowl and stir until everything is well-coated. This is where the magic happens! The mixture gets transferred back into a ziplock bag along with chopped pistachios and powdered sugar. Seal it up tight and give it a good shake to coat all the pieces evenly with that sweet, powdery goodness.

Pop it in the fridge for about 45 minutes to firm up the chocolate, and voilà! You’ve got a crunchy, chocolatey, nutty treat that’s perfect for snacking. Ingredients
  

  • 6 rice cakes plain
  • 1 cup chocolate chips
  • 3 tbsp pistachio cream
  • ¼ cup pistachios chopped
  • ½ cup powdered sugar

Instructions
 

  • Add rice cakes into a ziplock bag and crush, leaving larger chunks (around an inch or so big).
  • Melt chocolate and pistachio cream together in the microwave in 30 second increments, stirring frequently until you have a smooth mixture.
  • Add crushed rice cakes into a mixing bowl, pour in melted chocolate mixture, and stir well to coat.
  • Add coated rice cake pieces back into ziplock bag and add chopped pistachios and powdered sugar.
  • Seal the bag tightly and then shake it to coat all of the pieces in powdered sugar.
  • Let chill in the fridge for 45 minutes to allow the chocolate to harden to the rice cake pieces.
  • Pour into a bowl and enjoy!
