These Trail Krispie Treats are the perfect mix of wanting something substantial and wanting a sweet little treat. The ingredients are all filling whole foods (nuts, seeds, fruits), but its all held together by a delicious marshmallow creme that fills these with ribbons of sweetness! They’re perfect to make ahead and have on hand all week for when you need a burst of energy.

What’s in trail krispie treats?

The base of these is a mix of good-for-you ingredients that give you great, lasting energy! Instead of puffed rice (which you can totally use), I used puffed kamut, which is a whole grain that’s high in fiber. It’s a bit larger/thicker than puffed rice as well. I also added various nuts – walnuts and pistachios, for a hint of salty and a hit of healthy fat. I mixed in pepitas (pumpkin seeds) which have loads of health benefits (antioxidants and nutrients, woo!). I added dried cranberries, which are also rich in antioxidants, for a little fruity flavor.

Making Trail Krispie Treats

Making these is an absolute breeze, similar to the rice krispie treats you’d make as a kid. First, you’ll want to line a 9×9 pan with parchment paper (and spray with some cooking spray for good measure). Then, in a big bowl, combine your base ingredients:

  • Puffed kamut (or puffed rice)
  • Mixed nuts of choice (I did walnuts and pistachios)
  • Pumpkin seeds (you can add other seeds etc too)
  • Dried cranberries (and any other dried fruits you want to add – raisins etc all work!)

Mix that all up, set it aside. Meanwhile, in a medium saucepan, melt butter and add marshmallows. Stir continuously as the marshmallows start to melt. Once mostly melted, add vanilla and stir until you have a smooth mixture. Pour the mixture (careful, it’ll be hot) over the trail mix and quickly stir it all together to fully coat. Pour the mixture into your lined pan and using a spoon that you’ve sprayed with cooking spray (to prevent sticking), pat the mixture down until its even and firmly packed. Let cool for 3-4 hours, slice, and enjoy! Store leftovers in an airtight container.

  • 3/4 cup pumpkin seeds
  • 1/2 cup dried cranberry
  • 1/2 cup nuts of choice
  • 3.5 cups puffed rice or puffed kamut
  • 10 oz marshmallows
  • 1 Tsp vanilla
  • 4 tbsp butter or smart balance butter substitute

Instructions
 

  • Line 9×9 pan with parchment paper and spray with cooking spray to prevent sticking.
  • Combine nuts, seeds, dried fruit, and puffed kamut (or rice) in a large mixing bowl and set aside.
  • In a medium saucepan, melt butter and add marshmallows. Stir continuously as the marshmallows start to melt. Once mostly melted, add vanilla and stir until you have a smooth mixture. Pour the mixture (careful, it'll be hot) over the trail mix and quickly stir it all together to fully coat.
