Move over oatmeal raisin, there’s a new cookie contender. The beauty of oatmeal raisin cookies is the buttery, sugary cookies and the dotting of sweet raisins. My version uses chocolate and dried cherries, introducing a whole new flavor profile. Rich chocolate, tart cherry, paired with a buttery oat base, makes for an irresistible chocolate cherry oatmeal cookie.
Making Chocolate Cherry Oatmeal Cookies
These cookies are simple to make and totally make oatmeal cookies cool again. Like most cookies, they start with creaming butter and sugar together until you have a smooth, creamy mixture. Then, you add vanilla and egg, combining all of the wet ingredients of the cookies.
Once you have a uniform mixture, you’ll begin to incorporate dry ingredients slowly, which you should pre-mix in another bowl. Slowly pour the dry ingredients in, while your mixer is going on low, to combine. The last step is to fold in the cherries and chocolate chips, and then you’ve got a delicious dough that’s ready to use! You can use a cookie scoop or use your hands to form even balls.
Place the cookies on a prepared baking sheet (lined with parchment paper or silicone baking mats) and flatten half way. You can use your hand or the back of a spatula. Then, just bake for 14-16 minutes for deliciously chewy cookies. These are sure to be a hit at your next cookie swap (or when you just want to treat yourself).
