Ingredients
- 4-6 cups arugula
- 3 peaches
- 2 tbsp brown sugar replacement
- 1 lb chicken cooked, cooled, chopped
- 2 cups cucumber chopped
- 2 cups cherry tomato chopped
- 1 cup fat free feta
- 4 tbsp sliced almonds
- 1 cup air fried peaches about one peach
- 6 tbsp balsamic
- 2 tbsp olive oil
- 2 tbsp water
- Salt and pepper
- 1 tbsp monk fruit sweetener sugar replacement or honey
Instructions
- Slice peaches about 1/2 inch thick. Spray with cooking spray and sprinkle with brown sugar replacement. Air fry at 350 f for 9-11 min, until lightly browned and soft. Set aside to cool.
- Take one peach (about 1 cup of cooked slices worth) and add into a blender with dressing ingredients and blend on high speed until smooth. Season to taste.
- Chop your salad ingredients and cook and chop your chicken (you can use rotisserie chicken to make life easier).
- Layer feta as the base, top with cucumber, tomato, chicken, feta, sliced almonds, and sliced peaches.
- Spoon on dressing and enjoy!
