There’s something about s’mores that instantly transports me back to summer nights, sticky fingers, and the smell of toasted marshmallows over a campfire. These Smores Rice Krispie bars take all that cozy, chocolatey goodness and turn it into a no-bake dessert that’s just as nostalgic—without the need for a fire pit.
This recipe layers classic Cocoa Krispie treats with rich brownie dough and tops it off with gooey marshmallows and melty chocolate chips. It’s indulgent, a little over-the-top, and absolutely worth it. Think of it as the dessert mashup of your dreams: Rice Krispies + brownies + s’mores = magic.
Why You’ll Love These S’mores Rice Krispie Bars
- No oven needed – Perfect for summer or any time you don’t feel like baking.
- The ultimate texture combo – Chewy, fudgy, crunchy, and gooey all in one bite.
- Easy to customize – Toss on extra chocolate, graham cracker crumbs, or even peanut butter cups.
- Kid- and adult-approved – A hit at BBQs, sleepovers, or late-night snacking.
Ingredients You’ll Need
- 1/4 cup unsalted butter
- 7 oz marshmallows
- 4–6 cups Cocoa Krispies cereal
- Brownie dough* (homemade edible dough or store-bought)
- Mini marshmallows & chocolate chips (for topping)
Make sure your brownie dough is safe to eat raw—no eggs or raw flour. I like to use an edible brownie batter made specifically for no-bake desserts.
How to Make S’mores Rice Krispie Brownie Bars
- Prep your pan
Line a 9×5 loaf pan with parchment paper so you can easily lift the bars out once they’re chilled. - Make the Cocoa Krispie base
In a saucepan over low heat, melt the butter. Add the marshmallows and stir until smooth. Remove from heat and quickly mix in the Cocoa Krispies until fully coated. - Press into the pan
Use oiled hands or a spatula to press the mixture firmly into the prepared pan. You want a dense, even base. - Chill the base
Refrigerate for at least 2 hours, or until completely cooled and set. - Add brownie dough layer
Once the base is chilled, spread a thick layer of brownie dough evenly across the top. It doesn’t have to be perfect—this dessert is meant to be rustic and fun! - Top with s’mores-inspired goodness
Sprinkle a generous handful of mini marshmallows and chocolate chips over the brownie layer. For extra s’mores vibes, you could also crumble up some graham crackers on top. - Final chill
Refrigerate again for about 30 minutes so everything sets together nicely.
Storage Tips
These s’mores Rice Krispie bars store beautifully in the fridge for up to 5 days. You can also freeze them for longer—just wrap tightly and thaw before serving.
