Philly has been experiencing a heat wave lately, and that has my ice cream consumption through the roof! As the weather gets hotter, I just want to eat cold (if not, frozen) things. These Healthy Berry Ice Cream Bites have been on repeat in my house because they’re so easy and SO dang good! I love the combination of berry and chocolate, and these bites are pure indulgence, but lightened up thanks to some sneaky ingredients (more on that later). I hope you love these as much as I do!
Making healthy berry ice cream bites
These little bites of heaven couldn’t be simpler. Just blend everything together, freeze, and coat in chocolate. Keep them in the freezer until you’re ready to enjoy them, and then pop a perfect little ice cream bite into your mouth and enjoy!
To make these, you’ll need:
- Chocolate of choice. If following WW, I recommend a sugar free option like Lily’s Chocolate chips.
- Frozen berries of choice (I used a mixed berry blend that had strawberries, raspberries, blueberries, and blackberries).
- Cottage cheese – if following WW, use fat free, otherwise you can use any cottage cheese you like.
- Sweetener of choice – I use a no calorie monk fruit sweetener.
- A little bit of milk (whichever you like) to thin things out so they blend.
Combine berries, cottage cheese, sweetener, and milk and blend until smooth. Pour into an ice cube tray (I used this one) and freeze until completely solid. Once solid, coat in chocolate, and then freeze until chocolate hardens. Store in the freezer and enjoy!
Pro tip: If you want to get a perfectly thin chocolate coating, blend your fruit mixture and set aside. Pour about half of the melted chocolate into the molds and swirl it around to cover all sides. Put it in the freezer for 5 minutes or so until solid, then pour in the fruit mixture and freeze until solid. Top with remaining melted chocolate and pop back in the freezer.

Ingredients
- 1/2 cup fat free cottage cheese
- 3/4 cup frozen berries
- 1 tbsp milk
- 1 tbsp monk fruit
- 1 cup sugar free chocolate chips
Instructions
- Combine berries, cottage cheese, sweetener, and milk and blend until smooth.
- Pour into an ice cube tray and freeze until completely solid (a few hours).
- Melt chocolate in 30 second intervals in the microwave, stirring until smooth.
- Once berry ice cream bites are solid, coat in chocolate, and then freeze until chocolate hardens. Store in the freezer and enjoy!
