Healthy Berry Ice Cream Bites

Equipment

  • Blender
  • Ice cube tray or mold of choice

Ingredients
  

  • 1/2 cup fat free cottage cheese
  • 3/4 cup frozen berries
  • 1 tbsp milk
  • 1 tbsp monk fruit
  • 1 cup sugar free chocolate chips

Instructions
 

  • Combine berries, cottage cheese, sweetener, and milk and blend until smooth.
  • Pour into an ice cube tray and freeze until completely solid (a few hours).
  • Melt chocolate in 30 second intervals in the microwave, stirring until smooth.
  • Once berry ice cream bites are solid, coat in chocolate, and then freeze until chocolate hardens. Store in the freezer and enjoy!

Notes

If you want to get a perfectly thin chocolate coating, blend your fruit mixture and set aside. Pour about half of the melted chocolate into the molds and swirl it around to cover all sides. Put it in the freezer for 5 minutes or so until solid, then pour in the fruit mixture and freeze until solid. Top with remaining melted chocolate and pop back in the freezer.
