We all have those childhood treats that bring back waves of nostalgia with just one bite. For me, it’s always been Rice Krispie treats – that perfect combination of gooey marshmallow and crispy cereal. But as an adult trying to be at least somewhat health-conscious, I wanted to recreate that magic with a protein boost and less sugar. These Caramel Chocolate Protein Rice Krispie Treats were born from that craving, using rice cakes instead of cereal and adding protein powder for nutrition. The peanut butter caramel swirls and chocolate coating take these to a whole new level of deliciousness that satisfies both the inner child and the grown-up in me. They’re perfect for a quick breakfast, post-workout snack, or when you just need something sweet without the guilt!
Making Caramel Chocolate Protein Rice Krispie Treats
What I love most about these treats is how incredibly simple they are to make – no baking required! The whole process takes about 15 minutes of active time, and then you just need patience while they set in the fridge.


First, you’ll crush your rice cakes into small pieces. I find that putting them in a ziplock bag and using a rolling pin or heavy spoon works perfectly – and it’s a great way to release any pent-up stress! You want pieces that are small enough to bind together but not completely pulverized into dust.
Next, mix in your protein powder. I typically use chocolate (or vanilla works if that’s what you have on hand). This step not only adds nutrition but helps create that perfect chewy texture we’re looking for.
The magic happens when you melt together chocolate chips and peanut butter. This mixture becomes the “glue” that holds everything together while adding rich flavor. Make sure to melt them slowly in the microwave to avoid burning the chocolate – patience is key here!
What makes these treats special is the peanut butter swirl. By adding some separately melted peanut butter at the end and not overmixing, you get beautiful caramel-like ribbons throughout each bite. The flaky sea salt on top is optional but highly recommended – it cuts through the sweetness and makes the chocolate flavor pop even more.
After pressing the mixture firmly into your pan (this helps them hold together when cut), all that’s left is waiting for them to set in the fridge. I know it’s tempting to dig in right away, but trust me, that hour of cooling time is worth it for perfectly sliceable treats!


Caramel Chocolate Protein Rice Krispie Treats

- Mixing Bowls
- 8×8 Pan
Ingredients
- 7 caramel rice cakes 100g
- 1 scoop protein powder about 2 tbsp, chocolate flavor
- 1 cup chocolate chips about 6 oz
- 4 tbsp peanut butter divided in half
- Flaked sea salt for topping
Instructions
- Put rice cakes in a large Ziploc bag and use a heavy spoon or mallet to break them into small pieces.
- Put crushed rice cakes in a bowl and add protein powder, then mix to combine.
- Add chocolate chips and 2 tbsp peanut butter to a microwave-safe dish, and then microwave in 30 second intervals until completely melted and smooth. Mix together and then pour into your rice cake mixture. Mix well to coat the rice cakes.
- Microwave the remaining 2 tablespoons of peanut butter for 30 seconds until runny, and then mix that into your mixture, not over mixing so you’ll get some ribbons of peanut butter flavor throughout.
- Pour mixture into a parchment lined 8 x 8 pan, and press down firmly to form your treats. If desired, drizzle some additional melted chocolate over the top and finish with a hefty pinch of flaked sea salt.
- Let sit in the fridge for an hour and then cut into 12 bars and enjoy!
