In a large bowl, combine ground turkey, bread crumbs, egg, salt, pepper, garlic powder, Italian seasoning, and tomato paste. Mix well until uniform, being careful not to overwork the meat.
Form mixture into 4 even patties, slightly indenting the center of each (this helps them cook evenly).
Spray air fryer tray with non-stick spray. Place patties in the air fryer and cook at 365°F for 15-17 minutes, until the internal temperature reaches 165°F. Use a meat thermometer to check for doneness.
Top each burger with 1 tbsp pizza sauce, 2 tbsp shredded mozzarella, 4 pepperoni slices, and 1/2 tbsp grated parmesan.
Return to the air fryer for about 2 minutes, until the cheese melts and pepperoni edges begin to crisp.
Place each burger on a bun, top with fresh basil leaves, and enjoy!

If you don't have an air fryer, cook the patties in a skillet over medium heat for about 5-6 minutes per side until they reach 165°F internally.
For a lower-carb option, serve these on lettuce wraps or over a salad instead of buns.
These patties can be made ahead and frozen raw between parchment paper for quick weeknight meals.
