Ingredients
  

Dressing
  • 1/2 cup nonfat Greek yogurt plain
  • 1/3 cup light mayo
  • 2 tbsp Ranch seasoning
  • 2 tbsp white vinegar
  • 2 tbsp low fat milk
Base
  • 4 cups cooked chicken shredded and cooled
  • 6 slices bacon cooked and chopped finely (about 1/2 cup)
  • 2 small jalapenos or 1 large, diced with seeds and ribs removed (about 1/3 cup)
  • 2/3 cup thick shredded cheddar cheese
  • 1 cup celery finely diced

Instructions
 

  • If you are cooking your chicken fresh, place the chicken breasts into a large pot and cover with enough water to submerge them by about one inch. Bring the water to a boil over medium high heat and cook thoroughly until the internal temperature reaches 165°F. Remove the cooked chicken from the pot and transfer it directly into the bowl of a stand mixer fitted with the paddle attachment. Turn the mixer on low speed to quickly shred the chicken into a medium fine consistency, then set aside to cool down completely.
  • While the chicken cools, cook your bacon slices in a skillet or the oven until they are completely crispy, then drain the grease and chop the bacon finely. Wash your fresh produce, ensuring you slice the jalapenos open to scrape out all the seeds and white membranes before dicing the pepper flesh. Finely dice your celery stalks.
  • In a medium bowl, combine the plain Greek yogurt, mayo, ranch seasoning, white vinegar, and milk. Whisk the dressing ingredients together vigorously until the mixture is completely smooth and uniform.
  • In a large mixing bowl, combine the cooled shredded chicken, crispy chopped bacon, diced jalapenos, diced celery, and thick shredded cheddar cheese. Pour the creamy ranch dressing over the chicken salad base components. Use a large spoon or spatula to stir and toss everything together until the ingredients are fully integrated and evenly coated in the dressing.
  • Serve the chicken salad immediately with your choice of pretzels, chips, bread, or veggies, or cover the bowl tightly and store it in the refrigerator for an easy, cold meal prep option throughout the week.
