Italian Hoagie Pizza Pinwheels

Ingredients
  

Dough:
  • 2 cups flour
  • 1 cup greek yogurt
  • 2 Tsp baking powder
  • 1 Tsp garlic powder
  • 1 Tsp salt
  • 1/4 Tsp pepper
  • 1 egg
Filling:
  • 1 cup Turkey pepperoni chopped
  • 6 slices lean ham chopped
  • 1/2 cup banana peppers chopped
  • 1/3 cup red onion chopped
  • 1.5 cup fat free mozzarella shredded
Dressing:
  • 3 tbsp Olive oil
  • 1/3 cup Red wine vinegar
  • 1 Tsp Italian seasoning
  • 1/2 Tsp powdered confectioners sugar replacement
  • Salt pepper to taste

Instructions
 

  • Preheat oven to 375F.
  • In a large bowl, ideally using a stand mixer + dough hook, combine all dough ingredients until you have a smooth dough ball.
  • Flour a surface well and roll dough out to large rectangle, roughly 12x16. In a small mixing bowl, combine chopped filling ingredients (using only 1/2 cup cheese) and mix together.
  • Leaving the long edge thats further from you about 1 inch uncovered (see photo above), spread filling mixture all over dough. Sprinkle with remaining 1 cup cheese.
  • Starting at the long edge closer to you, carefully roll the dough up to create a roll, leaving the seam side down. Cut into 12 even pinwheels.
  • Spray an 8x8 square baking dish well with cooking spray and arrange pinwheels in it. Spray tops with cooking spray and bake at 375F for 25-30 minutes. Let cool slightly.
  • Whisk together dressing ingredients and finish your pinwheels with a drizzle of dressing right before eating. Store pinwheels and dressing separately in airtight containers in the fridge. Enjoy!
