4cupsboneless skinless chicken breastcooked and shredded

2/3cupsalamidiced
1cupprovolone cheeseshredded
1.5cupscelerydiced
1cupbanana pepperschopped, or use pepperoncini peppers
2/3cupred oniondiced
Zesty Dressing:
1/2cupplain Greek yogurt
1/3cuplight mayo
1/4cupjuice from jarred banana peppers
2tbspred wine vinegar
1tbsphoney
1tspItalian seasoning
1/4tspgarlic powder
Salt to taste
Black pepper to taste
Instructions
Place your chicken breasts into a large saucepan or stock pot and pour in enough water to cover the chicken by about one inch. Bring the water to a boil over medium-high heat and cook the chicken thoroughly until the internal temperature reaches 165°F.
Remove the cooked chicken from the pot and transfer it directly into the bowl of a stand mixer fitted with the paddle attachment. Run the mixer on low speed for 35 to 45 seconds to quickly shred the chicken into a medium-fine consistency. Set the shredded chicken aside or place it in the refrigerator to cool down completely.
In a large mixing bowl, combine the diced pepperoni, diced salami, shredded provolone cheese, diced celery, chopped pepperoncini peppers, and diced red onion.
In a separate medium bowl, whisk together the Greek yogurt, light mayo, banana pepper juice, red wine vinegar, honey, Italian seasoning, garlic powder, salt, and black pepper until completely smooth.
Add the cooled shredded chicken directly into the large bowl with your chopped meats and vegetables.
Pour the dressing over the chicken mixture and use a large spoon or spatula to stir and toss everything together until the ingredients are fully integrated and evenly coated.
Serve immediately with bread, crackers, or lettuce wraps, or cover tightly and store in the refrigerator for meal prep throughout the week.
