Equipment

  • Mixing Bowl
  • Cookie Scoop

Ingredients

  • 1.5 cups almond flour
  • 1/4 cup cashew butter
  • 1 tsp vanilla paste
  • 1/4 cup maple syrup
  • Pinch of salt
  • 3 tbsp mini M&Ms or mini chocolate chips

Instructions

  • Add the almond flour, cashew butter, vanilla paste, maple syrup, and pinch of salt into one of your mixing bowls. Stir the ingredients together thoroughly using a spatula or spoon until a soft, uniform dough comes together. Gently fold in the mini M&Ms or mini chocolate chips until they are evenly speckled throughout the dough.
  • Line a plate or small tray with a sheet of parchment paper. Use a small cookie dough scoop to scoop out level portions of dough, then gently roll them between your palms to smooth them into even, bite-sized truffle balls. Arrange the truffles on your prepared plate and place them in the refrigerator for 20 to 30 minutes to firm up before serving.
  • Store leftover cookie dough truffles in an airtight container in the refrigerator for up to two weeks.
