Ingredients
  

  • cups all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • tsp nutmeg
  • 2 eggs
  • 1 cup unsweetened applesauce
  • cup avocado oil can sub melted cooled coconut oil
  • ½ cup monk fruit sweetener can sub maple syrup
  • ¼ cup milk can sub any plant milk
  • 1 tsp vanilla extract
  • cups chopped apple approx 2 apples, divided into 1 cup and ½ cup
  • 6 tbsp unsweetened apple butter

Instructions
 

  • Preheat oven to 350°F. Grease and line a 9×5 loaf pan with parchment paper.
  • In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and nutmeg.
  • In a separate bowl, whisk together eggs, applesauce, avocado oil, monk fruit sweetener, milk, and vanilla extract.
  • Pour wet ingredients into dry ingredients and mix just until combined. Don't overmix.
  • Fold in 1 cup of chopped apples. Pour ¾ of the batter into the prepared pan.
  • Dollop apple butter over the batter and use a knife to swirl it throughout.
  • Top with remaining batter, then sprinkle the remaining ½ cup chopped apples on top.
  • Bake for 55-65 minutes or until a toothpick inserted in center comes out clean.
  • Let cool completely in pan before removing and slicing. Store covered at room temperature for up to 4 days or freeze for up to 3 months.
