Ingredients
  

Black Cherry Jam
  • 1 lb frozen dark sweet cherries
  • 1.5 tbsp monk fruit
  • 1/2 tbsp cornstarch mixed with water
Other Ingredients
  • 1 ⅓ cup granola of choice 1/3 cup for each parfait
  • 4 cups yogurt of choice 1 cup for each parfait - I used greek yogurt, plain or vanilla

Instructions
 

  • Combine cherries and sweetener in saucepan over medium heat, bring to a boil, and stir until cherries release their juices and are falling apart (about 10 minutes).
  • Combine cornstarch and water and mix into the cherries and stir to thicken. Remove from heat and let cool.
  • In a jar, layer yogurt, granola, and cherries, alternating as you go (you'll use about ⅓ cup of granola, 1 cup of yogurt, and ½ cup of the cherry mixture in each parfait).
  • Enjoy immediately!
  • Store leftovers in airtight jars in the fridge - store ingredients separately so your granola doesn't get soggy.
