Ingredients
  

  • 4 tablespoons unsalted butter 1/2 stick
  • 10 ounces mini marshmallows plus an optional handful for mix-ins
  • 1 teaspoon cake batter extract
  • 1/2 teaspoon vanilla bean paste
  • Pinch of salt
  • 4 cups crispy rice cereal
  • 1 cup chopped Nilla wafers
  • 1/4 cup rainbow sprinkles plus 2 extra tablespoons for topping

Instructions
 

  • Line an 8x8 pan with parchment paper and set it aside.
  • In one of your large mixing bowls, combine the crispy rice cereal, chopped Nilla wafers, 1/4 cup of rainbow sprinkles, and an optional extra handful of whole mini marshmallows.
  • Melt the butter in a large saucepan over medium-low heat until completely liquid. Add the 10 ounces of mini marshmallows to the saucepan and stir continuously over low heat until they are fully melted, smooth, and fluffy.
  • Remove the pan from the heat, add the cake batter extract, vanilla bean paste, and pinch of salt, mixing thoroughly until completely smooth and integrated into the melted marshmallow mixture.
  • Pour the warm marshmallow mixture over the dry cereal and cookie mix in your bowl. Working quickly before the marshmallow sets, use a greased silicone spatula to toss and fold everything together until all cereal pieces and wafer chunks are thoroughly coated.
  • Transfer the mixture into your prepared pan and press down lightly with a spatula or parchment paper into an even layer without packing it down too firmly.
  • Scatter the remaining 2 tablespoons of rainbow sprinkles over the top of the treats and press down gently so they adhere to the surface.
  • Let the treats cool and set at room temperature for at least 1 to 2 hours before using the parchment paper to lift them out, slicing into 16 even squares, and serving.
