Start by lining a plate or small baking board with parchment paper. Slice each date lengthwise, remove the pit, and gently open and flatten them so they form a sturdy base.
Spoon about 1/4 teaspoon of peanut butter onto each date half. Place one banana slice on top of the peanut butter, pressing gently so it sticks.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave for 1 minute, then stir until smooth and fully melted. If needed, microwave in 15-second increments until glossy.
Spoon the melted chocolate over each assembled date, covering the banana and peanut butter completely. While the chocolate is still wet, sprinkle with crushed peanuts and finish with a pinch of flaky sea salt.
Transfer the bites to the refrigerator for about 40 minutes or the freezer for 20 minutes, until the chocolate is fully set.
