Ingredients
  

  • 10 Medjool dates pitted and sliced lengthwise
  • 5 teaspoons creamy peanut butter 1/4 teaspoon per date half
  • 20 banana slices about ½-inch thick (approx 1 banana)
  • 3/4 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1/4 cup peanuts chopped
  • Flaky sea salt for topping

Instructions
 

  • Start by lining a plate or small baking board with parchment paper. Slice each date lengthwise, remove the pit, and gently open and flatten them so they form a sturdy base.
  • Spoon about 1/4 teaspoon of peanut butter onto each date half. Place one banana slice on top of the peanut butter, pressing gently so it sticks.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave for 1 minute, then stir until smooth and fully melted. If needed, microwave in 15-second increments until glossy.
  • Spoon the melted chocolate over each assembled date, covering the banana and peanut butter completely. While the chocolate is still wet, sprinkle with crushed peanuts and finish with a pinch of flaky sea salt.
  • Transfer the bites to the refrigerator for about 40 minutes or the freezer for 20 minutes, until the chocolate is fully set.
  • Enjoy immediately or store in an airtight container in the fridge.
