Healthy BBQ Chicken Pizza Pinwheels

Equipment

Ingredients
  

Dough:
  • 2 cups flour
  • 1 cup greek yogurt
  • 2 Tsp baking powder
  • 1 Tsp garlic powder
  • 1 Tsp salt
  • 1/4 Tsp pepper
  • 1 egg
Filling:
  • 2 cup chopped chicken breast
  • 1/2 cup BBQ sauce
  • 1.5 cups cheese I used fat free cheddar
  • 1/4 cup red onion chopped
Toppings
  • 6 tbsp BBQ sauce
  • 6 tbsp ranch dressing
  • green onion chopped, for garnish
  • red onion chopped, for garnish

Instructions
 

  • Preheat oven to 375F.
  • In a large bowl, ideally using a stand mixer + dough hook, combine all dough ingredients until you have a smooth dough ball.
  • Flour a surface well and roll dough out to large rectangle, roughly 12x16. In a small mixing bowl, combine chicken and bbq sauce and mix together.
  • Leaving the long edge thats further from you about 1 inch uncovered (see photo above), spread mixture all over dough. Sprinkle with cheese and chopped red onion.
  • Starting at the long edge closer to you, carefully roll the dough up to create a roll, leaving the seam side down. Cut into 12 even pinwheels.
  • Spray an 8x8 square baking dish well with cooking spray and arrange pinwheels in it. Spray tops with cooking spray and bake at 375F for 25-30 minutes. Let cool slightly. Top with extra drizzle of bbq sauce, ranch, chopped red/green onion, and enjoy!
