In a large bowl, ideally using a stand mixer + dough hook, combine all dough ingredients until you have a smooth dough ball.
Flour a surface well and roll dough out to large rectangle, roughly 12x16. In a small mixing bowl, combine chicken and bbq sauce and mix together.
Leaving the long edge thats further from you about 1 inch uncovered (see photo above), spread mixture all over dough. Sprinkle with cheese and chopped red onion.
Starting at the long edge closer to you, carefully roll the dough up to create a roll, leaving the seam side down. Cut into 12 even pinwheels.
Spray an 8x8 square baking dish well with cooking spray and arrange pinwheels in it. Spray tops with cooking spray and bake at 375F for 25-30 minutes. Let cool slightly. Top with extra drizzle of bbq sauce, ranch, chopped red/green onion, and enjoy!
