Ingredients
  

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch salt
  • 2/3 cup milk
  • 2 tablespoons powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp maple extract
  • 2 large eggs
  • 4 tsp Smart Balance melted and cooled
  • 2 Bananas ripe and mashed

Instructions
 

  • Preheat your waffle maker and melt Smart Balance in the microwave (about 20 sec) and allow to cool. Mash bananas and set aside.
  • In a medium sized mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and powdered sugar. Stir together.
  • In a separate mixing bowl, whisk together eggs, mashed bananas, milk, vanilla and maple extracts, and melted Smart Balance.
  • Combine wet and dry ingredients, stirring until mixture is completely uniform.
  • Spray waffle iron and cook waffles (roughly 3 tbsp/waffle) until golden on either side. Serve with your choice of toppings and enjoy!
