Chocolate Cherry Oatmeal Cookies

These cookies are chewy and soft, bursting with flavors of creamy, rich chocolate and tart cherries, making for a KILLER flavor combo. The base is a super soft oatmeal cookie, which could be adapted to be eaten plain, or with other tasty mix ins (nuts, dried fruits, etc).

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup butter softened to room temperature
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups oats
  • 3/4 cup dried cherries cut up
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 350 F
  • Cream softened butter with granulated sugar and brown sugar, then add vanilla, egg, and combine
  • Whisk together flour, cinnamon, baking soda, oats, salt
  • Slowly add dry ingredients into wet and combine thoroughly
  • Fold in cherries and chocolate chips
  • Roll cookie dough into ~1 inch balls, put onto a prepared baking sheet, and press down with your hand or back of a spatula, flattening them about half way
  • Bake for 14-16 minutes for chewy cookies, enjoy!
