Healthy Pizza Pinwheels

These Healthy Pizza Pinwheels are the perfect game day snack and are great for a crowd. They're better-for-you, easy to make, and absolutely delicious!

Ingredients
  

Dough:
  • 2 cups flour
  • 1 cup greek yogurt
  • 2 Tsp baking powder
  • 1 Tsp Italian seasoning
  • 1 egg
Filling:
  • 1/2 cup pizza sauce
  • 1.5 cups cheese
  • 1 tbsp parmesan cheese
  • 1 tbsp chopped fresh basil
  • 1 cup turkey pepperoni chopped or whole, roughly 22 of them

Instructions
 

  • Preheat oven to 375F.
  • In a large bowl, ideally using a stand mixer + dough hook, combine all dough ingredients until you have a smooth dough ball.
  • Flour a surface well and roll dough out to large rectangle, roughly 12x16. In a small mixing bowl, combine shredded cheese and pizza sauce and mix together.
  • Leaving the long edge thats further from you about 1 inch uncovered (see photo above), spread mixture all over dough. Sprinkle with parmesan and chopped basil, top with pepperoni.
  • Starting at the long edge closer to you, carefully roll the dough up to create a roll, leaving the seam side down. Cut into 12 even pinwheels.
  • Spray an 8x8 square baking dish well with cooking spray and arrange pinwheels in it. Spray tops with cooking spray and bake at 375F for 25-30 minutes. Let cool slightly, sprinkle with extra parmesan and basil, and enjoy!
