Air Fryer Mojo Chicken

Ingredients
  

Marinade:
  • 4 garlic cloves pressed
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 3 oranges juiced
  • 2 limes juiced
  • 1 tbsp chopped fresh cilantro
  • 1/4 tsp chili powder
  • Salt and pepper to taste
Other:
  • 1 lb boneless skinless chicken breast
  • Vegetables of choice I like to do onion, pepper, zucchini
  • Yellow rice
  • 1 tsp butter

Instructions
 

  • Combine marinade ingredients and split mixture in half
  • Cut up chicken breast into roughly 1 inch chunks and put into a gallon freezer bag with 1/2 of the marinade
  • Let chicken marinate for 30-45 minutes in the fridge
  • Put other half of marinate in a small saucepan over medium heat. Add 1 tsp butter and reduce for ~10 minutes. Sauce should thicken a bit.
  • Air fry chicken pieces at 385 for 18-20 minutes (check after 15 with an internal thermometer- you want it to read 165)
  • Cook veggies of choice (I like to do red onion, zucchini, and pepper in the air fryer - 14-16 min at 390 usually does the trick)
  • Toss cooked chicken with reduced sauce and serve with side of yellow rice and air fried veggies. I like to serve with a chili-dipped lime wedge as well.
  • Top with extra chopped cilantro and enjoy!
