Equipment

  • Mixing Bowls
  • 8x8 baking dish or 9x9 or large oven-safe skillet
  • Large Cookie Scoop optional, for portioning meatballs

Ingredients
  

Meatballs
  • 1 lb lean ground chicken
  • 1 egg
  • 1/3 cup breadcrumbs
  • 2 tbsp water
  • 1 Tsp dried basil
  • 1/2 Tsp dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1/4 cup Parmesan cheese
Toppings
  • 1 jar pasta sauce 23.5 oz
  • 1 cup shredded Mozzarella cheese use fat free if following WW
  • 1/4 cup Parmesan cheese for topping
  • 1 tbsp chopped parsley for topping

Instructions
 

  • Preheat oven to 400F.
  • Combine all meatball ingredients in a large mixing bowl and mix until uniform. Using a cookie scoop or wet hands, form into 12 meatballs.
  • Pour your pasta sauce into 8x8 dish, and evenly space meatballs in the sauce.
  • Bake for 30-35 min, until internal temp reaches 165F.
  • Remove from oven, top with shredded Mozzarella and Parmesan cheese, and bake for another 6-8 min (or broil) until cheese is melted.
  • Serve warm over pasta and enjoy!
