Chicken Parmesan Meatballs

8x8 baking dish or 9x9 or large oven-safe skillet
Large Cookie Scoop optional, for portioning meatballs
Meatballs- 1 lb lean ground chicken
- 1 egg
- 1/3 cup breadcrumbs
- 2 tbsp water
- 1 Tsp dried basil
- 1/2 Tsp dried parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 1/4 cup Parmesan cheese
Toppings- 1 jar pasta sauce 23.5 oz
- 1 cup shredded Mozzarella cheese use fat free if following WW
- 1/4 cup Parmesan cheese for topping
- 1 tbsp chopped parsley for topping
Preheat oven to 400F.
Combine all meatball ingredients in a large mixing bowl and mix until uniform. Using a cookie scoop or wet hands, form into 12 meatballs.
Pour your pasta sauce into 8x8 dish, and evenly space meatballs in the sauce.
Bake for 30-35 min, until internal temp reaches 165F.
Remove from oven, top with shredded Mozzarella and Parmesan cheese, and bake for another 6-8 min (or broil) until cheese is melted.
Serve warm over pasta and enjoy!
