Instructions
Slice peaches about 1/2 inch thick. Spray with cooking spray and sprinkle with brown sugar replacement. Air fry at 350 f for 9-11 min, until lightly browned and soft. Set aside to cool.
Take one peach (about 1 cup of cooked slices worth) and add into a blender with dressing ingredients and blend on high speed until smooth. Season to taste.
Chop your salad ingredients and cook and chop your chicken (you can use rotisserie chicken to make life easier).
Layer feta as the base, top with cucumber, tomato, chicken, feta, sliced almonds, and sliced peaches.
