Cottage Cheese "Dirt" Pudding Cups

Ingredients
  

  • 1 cup fat free cottage cheese if not following WW, feel free to use a regular cottage cheese with higher fat content
  • 3.5 tbsp unsweetened cocoa powder
  • 2 tbsp monk fruit sweetener or other sweetener of choice (can add more if desired)
  • 1/2 tsp vanilla extract
  • 1/2 tbsp almond milk (only if needed) to thin your pudding/help it blend
  • 3 Oreo thins crushed
  • 6 gummy worms I used Smart Sweets worms which are a great no sugar, WW-friendly option

Instructions
 

  • Add your cottage cheese, cocoa, monk fruit, and vanilla to a blender. Blend on high speed until mixture is totally smooth and uniform - about 5 min. If needed, add a splash of unsweetened almond milk to thin it out.
  • Taste and adjust sweetness to your liking.
  • Split pudding evenly between two jars (I used small Ball canning jars).
  • Let pudding cups sit in the fridge for 30-60 min, to allow the pudding to firm up. Top with crushed oreos and 3 gummy worms each. Dig in and enjoy!
