Combine all ingredients in a blender and blend on high speed until smooth. Let sit in the fridge for 15-30 minutes.
Heat non-stick pan over medium heat. Spray well with cooking spray. Add 3-4 tbsp of batter to the pan and swirl batter around until the bottom is covered.
Once the batter has cooked enough that it's not runny and the sides start to lift (about a minute or two), gently flip over. Your crepes should only be slightly browned, but not dark!
Let cook for another 30-45 seconds.
Fill crepes with fruit, nut butter, chocolate, etc and enjoy! Store unfilled crepes in an airtight container in the fridge for up to 3 days, but these are best enjoyed fresh.
