Equipment

  • Blender
  • Non-Stick Pan 8 inch size

Ingredients
  

  • 2 eggs
  • 1 1/4 cups almond milk or any milk you like
  • 1/2 tsp

    vanilla 
extract

  • 1 very ripe banana
  • 1 tablespoons sugar replacement or sugar
  • 1 cup all-purpose flour
  • 1/4 tsp salt

Instructions
 

  • Combine all ingredients in a blender and blend on high speed until smooth. Let sit in the fridge for 15-30 minutes.
  • Heat non-stick pan over medium heat. Spray well with cooking spray. Add 3-4 tbsp of batter to the pan and swirl batter around until the bottom is covered.
  • Once the batter has cooked enough that it's not runny and the sides start to lift (about a minute or two), gently flip over. Your crepes should only be slightly browned, but not dark!
  • Let cook for another 30-45 seconds.
  • Fill crepes with fruit, nut butter, chocolate, etc and enjoy! Store unfilled crepes in an airtight container in the fridge for up to 3 days, but these are best enjoyed fresh.
