Healthy Banana Chocolate Chip Pancakes

It happens every week. I buy bananas. I have big plans for said bananas. I forget to eat them. I end up with super overripe bananas. Do you also have some bananas laying around that look like they’re past their prime? DON’T THROW THEM OUT! Mash em up, mix them with a few ingredients that you probably already have in your pantry, and whip up these quick, easy, healthy banana chocolate chip pancakes! 

Making healthy banana chocolate chip pancakes

These pancakes really couldn’t be simpler, so they’re great on a busy morning or when you’re in a pinch. They’re also easy to make ahead and store in the fridge, reheating some each day.

First, just mash your bananas well. I do this with a potato masher that ensures a really smooth finished product. Then, add your eggs and vanilla and mix until smooth. In a separate bowl, combine flour, chocolate chips, and baking powder. Pour dry ingredients into wet and mix until you have a uniform, smooth batter. And that’s it!

Cook these like you would any other pancake. Heat your pan/griddle up on medium heat. Then, spray well with cooking spray. Pour about 2 tbsp of batter into the hot pan, and when bubbles start to develop, it’s time to flip. Repeat, top with some syrup, and enjoy!

Ingredients
  

  • 3 ripe bananas
  • 2 eggs beaten
  • 1/3 cup flour self rising is ideal, All Purpose works as a substitute
  • 1/2 tsp baking powder omit if using self rising
  • Splash of Vanilla
  • optional 1/4 cup oats (for texture)
  • 1/4 cup chocolate chips I used @lilys_sweets dark chocolate chips

Instructions
 

  • Using a potato masher or a fork, mash the bananas
  • Add eggs, vanilla and combine until mixture is uniform
  • Stir in flour, oats, chocolate chips
  • Fry in canola oil spray (or spray of choice) until you see bubbles on the top (2-3 min), then flip and cook 2-3 min to finish
